Easy Butter Chicken Recipe

Check out this easy, yet delicious butter chicken recipe that I would at the Canadian Living website.  You will be amazed by how enjoyable it is. I was able to find all the ingredients for this recipe at my local health food store.

Pumpkin Penne Pasta Recipe

As you’ve probably noticed with some of my other recent posts, I’m really enjoying recipes that contain pumpkin at the moment.  I hope you enjoy this one as much as my family did last night.

What You Will Need:

–   1 package of penne pasta (you don’t necessarily need penne specifically but it is a favourite of mine)

–   2 Tbsp of olive oil

–   2-3 cloves of grated garlic (depending on how much you like garlic)

–   1 can (roughly 1 ¾ cups) of pumpkin puree

–   ½ cup of heavy cream (if you don’t have any in the house, I have used regular milk)

–   1 tsp of salt

–   1 tsp of crushed red pepper

–   ½ tsp of pepper

–   1 ½ Tbsp of sage

–   ¼ tsp of nutmeg

–   ½ tsp of cinnamon

–   grated parmesan or mozzarella on top

 

What You Need to do:

1.   Cook the pasta as indicated on the package.

2.   In a skillet, heat the oil and cook the garlic and crushed red pepper, until the garlic has softened.

3.   Stir in the broth, salt, cream and pepper.

4.   Next at the nutmeg, sage and cinnamon.  Let the contents of the skillet simmer, until everything has thickened.  If it doesn’t seem to thicken enough, especially if you are using regular milk instead of cream, add some cheese at this point.

5.   Now all you have to do is mix the sauce with the pasta and serve.

Strawberry Cheesecake Ice Cream Recipe

 

I found this delicious recipe from Philadelphia website.  I just wish I would have found this recipe at the beginning of summer.  Here is the recipe:

 

What You Will Need:

–   8oz (1 package) of cream cheese

–   1 can (14oz) of sweetened condensed milk

–   2 tsp of lemon juice

–   1/3 cup of whipping cream

–   3 chopped up graham crackers

–   1 1/2 cups of strawberries

 

What You Will Need to do:

1.  Mix the first four ingredients in a blender.  Once completely blended, place in the freezer for about 4 hours.

2.  Blend strawberries until smooth.  Then add the cream cheese mixture and continue to blend until mixed up completely.  Freeze until firm (roughly 7 hours).

3.  Take out of the freezer for about 15 minutes before serving so it will be easy to scoop and serve.

Home Made Graham Crackers Recipe

Here’s a great treat for the young and old.  This is another good idea to do with the kids as an activity.  This recipe should make about four dozen.

 

What You Will Need:

–  3/4 cup unbleached all-purpose flour

–  1 1/2 cups whole-wheat graham flour

–  1/4 cup sugar

–  1/4 cup brown sugar

–  1/4 tsp ground cinnamon

–  1 tsp baking powder

–  1/2 tsp baking soda

–  1/2 tsp salt

–  1 tsp vanilla extract

–  1/2 cup butter

–  4 Tbsp honey

–  1/4 cup cold water

 

What You Will Need to do:

1.   Preheat oven to 350°F.

2.   Mix both flours, both sugars, baking powder, salt, baking soda and cinnamon in a bowl with an electric mixer.

3.   Now add butter (it’s best to use cold butter).  Then add honey, vanilla and water.  Continue to mix until the contents of the bowel is mixed into a ball.

4.   Next, roll out dough onto waxed paper.  Leave the dough to be about 1/2 inch thick.

5.   Place dough in the refrigerator for about an hour until it is firm.

6.   Now that the dough is firm, lightly flour the dough and roll out the dough so that it is about 1/8 inch thickness.

7.   Then cut dough into roughly 2 inch squares and placed on parchment lined cookie sheets.  Poke each square a few times with a fork, like you would when baking a pie.

8.   Bake for 15 minutes or until the squares are lightly browned at the edges.

Kraft Version of the Mandarin Hunan Pork Recipe

As I’ve mentioned in a previous post, I really like the Hunan dish from Earls and have posted a copycat version of the recipe.  I’ve found another version of the recipe that Kraft has made.  Check out the recipe below and try it for yourself.

 

 Mandarin Hunan Pork recipe

 

What You Will Need: 

–   1/4 cup Kraft Mandarin Orange with Sesame Dressing

–   2 Tbsp hoisin sauce

–   1-1/2 tsp soy sauce

–   1 Tbsp oil

–   2 red peppers – cut into bite-sized pieces

–   2 jalapeño peppers, seeded and chopped

–   1 piece gingerroot, peeled and thinly sliced (about an 1 inch in size) 

–   2 cloves garlic, thinly sliced

–   1 lb. (450 g) pork tenderloin, cut into bite-size pieces

–   5 sprigs fresh cilantro

 

What You Will Need to do:

1.   Mix the first 4 items together.

2.   Heat the oil in the wok or a skillet.  Add peppers, ginger and garlic for roughly 30 seconds. 

3.   Add meat and cook until done (roughly 5-6 minutes).

4.   Now stir in the dressing and bring it to a boil.

5.   Place on dish and sprinkle cilantro on top.  

KFC Original Chicken Recipe

I`ve tried quite a few FKC recipes to make their infamous kitchen and I think I finally found                    
a recipe that is very, very close to the original.  Here`s the recipe for the coating:

What You`ll Need:

–  2 cups flour
–  4 tsp paprika
–  2 1/2 tsp salt
–  1/2 tsp pepper
–  1 tsp poultry seasoning
–  1 tsp thyme
–  1 tsp oregano
–  1 tsp tarragon
–  1/2 tsp garlic salt
–  1/2 tsp onion salt
–  1/2 tsp celery salt

What You`ll Need to Do:

1.  Mix all the ingredients together in a ziploc type of bag.

2.  Roll a piece of chicken in to a beaten egg.

3.  Then place the piece of chicken in the bag with all the mixture.  Coat the chicken completely with the mixture.

4.  Now brown the chicken in oil skillet uncovered at a very low heat until the chicken is fully cooked.

Home Made Five Guys and Fries Burger Recipe

Looking for the recipe for the infamous Five Guys and Fries Burgers?
Look no further as here it is:

What You’ll Need:

–  1 lb Ground beef (or chicken of turkey)
–  1/2 cup bread crumbs or cooking oats will do
–  1 egg
–  2 tbsp milk
–  1 tsp Chile pepper flakes (optional)
–  1 tbsp Montreal steak spice
–  dash of salt and pepper for taste
–  hot sauce (optional)
–  1 tsp liquid smoke but only if you`re not cooking them on the BBQ

What You’ll Need to Do:

1.  Mix everything but ground beef together well.

2.  Add ground mix and well with your hands.

3.  Make burgers to the size of your buns.  Keep in mind that they will shrink.

4.  Cook from roughly 15 minutes on a pan or in the oven.  Usually the BBQ is a bit quicker.

Cherry Cheesecake Frozen Pops

 

What you’ll need:


–  12  –  3 oz Dixie cups

–  12 Popsicle sticks

–  3/4 cup coarsely chopped graham crackers

–  1 cup 35% cream

–  1/2 a pkg cream cheese (250g size)

–  1 tbsp lime juice

–  2 cups chopped fresh cherries

–  1/4 cup honey

 

 

 

Directions:

1.  Arrange Dixie cups on a baking sheet.

2.  Spoon 1/2 tsp of graham-cracker pieces into the bottom of each cup.

3.  Whip cream in a medium bowl using an electric mixer for about 2 min.

4.  With the same beaters, beat cream cheese in a separate bowl until fluffy (roughly about 2 min).

5.  Gradually whip in honey until smooth.  Stir in lime juice and cherries until combined.

6.  Fold in whipped cream and remaining graham-cracker pieces until you develop a swirled mixture.

7.  Spoon into cups, filling to the top and insert a popsicle stick into the centre of each cup.

8.  Freeze until firm – roughly 3 1/2 hours but they are sure worth the wait!  Yum!!

 

**As a side note, I have used Saskatoon Berries and/or raspberries in the past instead of cherries.

 

Cranberry Dinner Recipes

Here are some dinner recipes to help you out that have cranberries in them:

 

Slow Cooker Cranberry Turkey Breast

Ingredients You’ll Need:

–  1 can cranberry sauce

–  1 package dry onion soup mix

–  1/2 cup orange juice

–  3 pounds boneless turkey breast

 

Directions:

1.  Mix cranberry sauce, onion soup mix and orange juice together in a bowl until everything is well combined.

 

2.  Put turkey breast into slow cooker and pour mixture on top.

 

3.  Set the slow cooker on LOW and cook until turkey breasts are tender.  Roughly 7 hours.

Cranberry-Barbecue Pork Ribs Recipe

 

Ingredients You’ll Need:

–  3 pounds pork loin back ribs

–  1/2 teaspoon salt

–  1/2 teaspoon pepper

–  1 can of cranberry sauce

–  1 bottle of Heinz Chili Sauce

–  2 tablespoons minced onion

–  1 tablespoon red-wine vinegar

–  2 teaspoon minced garlic

 

Directions:

1.  Cut ribs into 2-rib portions.

2.  Place in slow cooker covering entire bottom.  Sprinkle with salt and pepper.

3.  Stir together cranberry sauce, chili sauce, onion, vinegar and garlic.  Then pour over ribs.

4.  Set slow cooker on LOW for 6 – 7 hours or until ribs are tender.

RICE KRISPIES – Easter Egg Dipper Treats

Here’s a cute, easy idea I found on the Rice Krispies website for a nice Easter treat.

Ingredients
1/4 cup     margarine or butter
1 pkg     250 g (about 40) regular or 5 cups (1.25 ml) miniature marshmallows
6 cups     RICE KRISPIES cereal
1-1/2 cups     semi-sweet or milk chocolate chips
5 tsp     shortening
    Multi-coloured sprinkles

Preperation
  1. In large saucepan, melt margarine over low heat.  Add marshmallows and stir until completely melted.  Remove from heat.
  2. Add cereal.  Stir until well coated.
  3. Using 50 ml (1/4-cup) measuring cup coated with cooking spray, divide warm cereal mixture into 24 portions. U sing lightly greased hands, shape each portion into egg shapes.  Place on baking sheets lined with wax paper. Cool.
  4. In small saucepan, combine chocolate chip and shortening.  Cook over low heat until melted, stirring constantly.
  5. Dip bottoms of cereal eggs into chocolate.  Decorate with sprinkles.  Place back on wax paper and refrigerate until chocolate is firm. Individually wrap in plastic wrap.
  6. MICROWAVE METHOD: In microwave-safe bowl, heat margarine and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 2 through 5 above. Microwave cooking times may vary.
