Tomato-Basil Turkey Casserole Recipe



Have some leftover turkey or just love turkey as much as I do?  Here’s a good recipe to try:


What You Will Need:

–   2 cups of a pasta of your choice (I usually use penne)

–   2 cups of diced cooked turkey

–   1 ½ cups of tomato pasta sauce (if you like pasta very saucy, add extra sauce)

–   1 ½ cups of sliced zucchini

–   1/4 cup of canned olives

–   1 tsp of dried basil leaves

–   1/4 cup of grated Parmesan cheese


What You Will Need to do:

1.   Preheat your oven to 375ºF.

2.   Spray a casserole dish with cooking spray.

3.   Cook and drain the pasta as indicated on the package.

4.   In the casserole dish, mix pasta and all of the ingredients except the cheese.

5.   Cover the dish and bake for 30 minutes.

6.   Sprinkle with cheese and bake uncovered for 15 to 20 minutes longer or until bubbly.

BLT Pasta Recipe


Love the usual BLT sandwiches?  Try it as a pasta recipe:


What You Will Need:

–   1/2 package of penne pasta

–   4 slices of cooked bacon

–   4 tomatoes

–   2 cloves of garlic, minced

–   2 cups of cooked chopped up turkey or chicken

–   1/3 cup of chicken broth

–   1/4 tsp of sugar

–   1/4 tsp of salt

–   1/4 tsp of pepper

–   1 Tbsp of dried basil

–   1 ¼ cups of spinach

–   1/2 cups of shredded mozzarella


What You Will Need to do:

1.   Cook the pasta as indicated on the package.

2.   Chop the bacon into bite-size pieces.  Followed by chopping the tomatoes into bite-sized pieces too.

3.   In a saucepan, cook together the bacon, garlic, tomatoes, chicken broth, sugar, salt, pepper and basil.  Let simmer for 5 minutes.  Add turkey and continue to simmer for 3 minutes.

4.   Now add the cooked, drained pasta to the mixture in the saucepan.  Stir together until the pasta is completely coated.  Add the spinach and cook for 1-2 minutes.

5.   Sprinkle cheese on top and enjoy!



Pizza Pasta Bake Recipe


Does your family love pizza but you’re looking to save a few dollars and make meals at home?  Try this great alternative to pizza.

What You Will Need:

–   3 cups of penne

–   1 green pepper chopped up

–   1 red pepper chopped up

–   2 cups of pasta sauce

–   1 ½ cups of pepperoni slices

–   1/4 cup of grated parmesan cheese

–   1 cup of grated marble cheese


What You Will Need to do:

1.   Cook penne pasta as indicated on package.  For the last 2 minutes, add the peppers to the pasta.

2.   Preheat your oven to 375°F.

4.   After the pasta is completely cooked, drain the water and stir in the pasta sauce.

5.   Next, stir in the pepperoni, 1/2 cup of marble cheese and parmesan cheese.

6.   Once the contents of the pot are mixed together well, place the contents into an 8” baking dish which has been sprayed with cooking spray.

7.   Sprinkle the remaining cheese on top.  Cover making dish and bake for 45 minutes.


Shrimp Pasta for Two Recipe



Are you looking for a quick dinner recipe on those busy nights?  Here’s a recipe to fill the stomach in a fraction of the time:

What You Will Need to do:

–   2 Tbsp of balsamic vinaigrette

–   ½ lb of peeled shrimp

–   1 cup of uncooked fettuccine

–   1 chopped tomato

–   ¼ package of cream cheese, cubed

–   2 Tbsp of basil

–   2 Tbsp of finely grated Parmesan cheese


What You Will Need to do:

1.   In a bowl, pour the balsamic vinaigrette over the shrimp and let marinate for at least 20 minutes in the refrigerator.

2.   Cook the pasta as indicated on the package.

3.   In a skillet, cook the shrimp for about 5 minutes or until the shrimp turns pink.  Set the shrimp aside.

4.   Next, place the cream cheese, tomatoes and basil into skillet and cook for about 3 minutes or until everything is mixed together well.

5.   Add the shrimp to the skillet and continue to stir together.

6.   Drain the pasta, place on plate and pour the skillet contents on top.

7.   Sprinkle cheese on top and enjoy!


Slow Cooker Pizza Casserole Recipe

Nothing beats coming home to a yummy meal ready to be serve:


What You Will Need:

–   1 pound of Italian sausage

–   3 ½ cups of crushed tomatoes

–   ¾ cup of chili beans

–   ¾ cup of black beans

–   ¼ cup of black olives

–   1 chopped medium onion

–   ½ chopped green pepper

–   2 minced garlic cloves

–   1 Tbsp of quick cooking tapioca

–   1 bay leaf

–   1 Tbsp of basil

–   1 tsp of salt

–   1 package of pasta of your choice

–   ½ tsp of sugar

–   shredded mozzarella cheese on top, as desired


What You Will Need to do:

1.   In a saucepan, cook the sausage.

2.   Place all the ingredients, except for pasta and mozzarella cheese in slow cooker.  Cook on LOW for 8 hours.

3.   Cook pasta as directed on the packaging.

4.   Pour contents of slow cooker over top of pasta, sprinkle cheese on top and enjoy!



Pasta Frittata Recipe


Here is a unique change to the average pasta, frittata recipe which I found at the Today’s Parent website with a few personal changes for ease:



What You Will Need:

–   2 tsp of butter

–   1 thinly sliced small zucchini

–   1 sliced green onion

–   ½ tsp of basil

–   ½ tsp of salt

–   2 cups of cooked pasta of your choice (when I’ve made this recipe in the past, I used penne)

–   6 whisked eggs

–   ½ cup of grated cheese of your choice (for this particular recipe I usually use marble cheese)


What You Will Need to do:

1.   Preheat your broiler.

2.   On the stovetop over medium heat, melt butter in a medium frying pan.

3.   Add zucchini, onion, basil and salt and stir-fry until zucchini is tender.  This will take about 4 minutes.

4.   Add the cooked pasta and stir until hot.

5.   Then add eggs.  Stir to disperse zucchini and pasta evenly.  Allow the bottom of the egg mixture to set.

6.   Then, lifting up one side of the frittata with a spatula while tilting the pan, let some of the runny egg run underneath.

7.   When the entire frittata is nearly set, sprinkle with cheese.  Place under the broiler until completely set, about 30 seconds.

Broccoli Pesto with Vermicelli Recipe


In our house, we have pasta at least once a week.  Here is a recipe to change up any plan pasta recipe:


What You Will Need:

–   1 package of vermicelli

–   4 cups of broccoli

–   ½ cup of parsley leaves

–   ½ cup of slivered almonds

–   2 Tbsp of olive oil

–   2 cloves of minced garlic

–   ½ tsp of salt

–   ½ tsp of pepper

–   1 ½ cups of sliced roasted red peppers

–   1 cup of red grape tomatoes

–   ½ cup of grated romano cheese (or any cheese you would prefer, sometimes I will use mozzarella cheese)


What You Will Need to do:

1.   Blanch broccoli in boiling salted water for 3 minutes; reserve 1 1/2 cups cooking water before draining.

2.   Mix the broccoli, parsley, half the almonds and the garlic in a food processor.  Pulse until everything has become fine.

3.   Next, slowly pour in 1/2 cup reserved cooking water and the olive oil until mixture is smooth. Add the salt and pepper.

4.   While you are completing steps 2 and 3, cook the pasta as indicated on the package.

5.   Toss the pesto and about 1 cup of the remaining cooking water with hot to the cooked pasta.

6.   Add roasted red peppers, tomatoes and cheese and toss to combine.

7.   Garnish with remaining toasted almonds and enjoy


Artichoke and Sundried Tomato Lasagna Recipe



I’m a huge fan of artichokes and sundried tomatoes so I think this is the perfect combination for a recipe.


What You Will Need:

–   2 cups of ricotta cheese

–   1 ¾ cup of artichoke hearts, drained, patted dry and chopped

–   1/3 cup of chopped, drained oil-packed sun-dried tomatoes

–   ½ tsp of pepper

–   ¼ tsp of salt

–   3 sheets of lasagna noodles

–   3 cups of grated mozzarella cheese (depending on preference, sometimes I’ll add more)


What You Will Need to do:

1.   Preheat your oven to 350°F.

2.   In a bowl, mix the ricotta, artichokes, tomatoes, pepper and salt together.

3.   Place 1 sheet of the pasta in a greased 8” square baking dish, cutting to fit.  Spread with half of the ricotta mixture. Repeat layers once; top with remaining pasta,

4.   Evenly distribute the mozzarella on top.  then provolone cheese.

5.   Cover with foil.

6.   Bake for 30 minutes.

7.   Now uncover and bake until cheese is golden and bubbly.  This should take about 10 minutes.

8.   Let sit for about 5 minutes before serving.


Crab Penne Casserole Recipe

 Crab 'n' Penne Casserole Recipe

Here is a frugal, crab dinner recipe:


What You Will Need to do:

–   1 ½ cups of uncooked penne

–   1 ½ cups of chopped imitation crab meat

–   1 jar (roughly 1 ¾ cups) of Alfredo sauce

–   1 medium, sliced squash

–   1 medium, sliced zucchini

–   1 ½ cups of shred mozzarella cheese

–   1 Tbsp of parsley

–   ¼ tsp of crushed red pepper flakes

–   2 Tbsp of dry bread crumbs

–   2 tsp of melted butter


What You Will Need to do:

1.   Cook the pasta as indicated on the packaging.

2.   In a bowl, mix the Alfredo sauce, squash, zucchini, crab, parsley and pepper flakes together.

3.   Once the pasta is cooked and drained, add to the ingredients already in the bowl.

4.   Preheat your oven to 325°F.

5.   Mix the sauce and pasta together so that the pasta is completely covered.

6.   Pour the contents of the bowl into a greased baking dish which is at least 9” x 13”.

7.    Cover the baking dish and bake for about 30 minutes.

8.   Once the pasta is heated all the way through, take it out of the oven.  Sprinkle bread crumbs and butter on top.

9.   Place the baking dish, now uncovered, back into the oven for about 5 minutes or until the bread crumbs have turned light brown.

Pumpkin Penne Pasta Recipe

As you’ve probably noticed with some of my other recent posts, I’m really enjoying recipes that contain pumpkin at the moment.  I hope you enjoy this one as much as my family did last night.

What You Will Need:

–   1 package of penne pasta (you don’t necessarily need penne specifically but it is a favourite of mine)

–   2 Tbsp of olive oil

–   2-3 cloves of grated garlic (depending on how much you like garlic)

–   1 can (roughly 1 ¾ cups) of pumpkin puree

–   ½ cup of heavy cream (if you don’t have any in the house, I have used regular milk)

–   1 tsp of salt

–   1 tsp of crushed red pepper

–   ½ tsp of pepper

–   1 ½ Tbsp of sage

–   ¼ tsp of nutmeg

–   ½ tsp of cinnamon

–   grated parmesan or mozzarella on top


What You Need to do:

1.   Cook the pasta as indicated on the package.

2.   In a skillet, heat the oil and cook the garlic and crushed red pepper, until the garlic has softened.

3.   Stir in the broth, salt, cream and pepper.

4.   Next at the nutmeg, sage and cinnamon.  Let the contents of the skillet simmer, until everything has thickened.  If it doesn’t seem to thicken enough, especially if you are using regular milk instead of cream, add some cheese at this point.

5.   Now all you have to do is mix the sauce with the pasta and serve.
