Cranberry Meatballs Recipe



Since Thanksgiving is around the corner and cranberries are on everyone’s mind, I thought this would be a great recipe to share.


What You Will Need:


–   4 beaten eggs

–   1 cup of crushed corn flakes

–   1/3 cup of chilli sauce

–   1 tsp of dried parsley

–   1 Tbsp of soya sauce

–   2 Tbsp of dried onion flakes

–   8 beef burger patties

–   ½ cup of crumbled Ritz crackers

–   1 packaged (8oz) of cream cheese

–   1 cup of Russian salad dressing

–   1 can (16oz) of cranberry sauce

–   1 tsp of brown sugar

–   1 Tbsp of lemon juice



What You Will Need to do:


1.   Preheat your oven to 350°F.  Spray two cookie sheets with cooking spray.


2.   In a mixing bowl, combine the eggs, corn flakes, soya sauce, chilli sauce, dried onion flakes, parsley flakes, beef burgers, Ritz crackers and cream cheese.


3.   Once the contents of the bowl are completely mixed together, makes 1” sized balls and place on the cookie sheets.


4.   Bake the meatballs for between 20 to 25 minutes.


5.   While the meatballs are baking, place the cranberry sauce, Russian dressing, brown sugar and lemon juice in a saucepan.  Stir frequently until everything is melted and mixed together.


6.   Once the saucepan contents are ready, add the cooked meatballs and let simmer for at least 10 minutes before serving so that the cranberry mixture and absorb into the meatballs.
