 Lemon-Blueberry Pretzel Cheesecake Squares


A dessert that is sweet and salty ~ hmm, my favourite.  I’m pretty sure you’ll find that this recipe will fulfill both the those cravings.


What You Will Need:

–   1 roll of refrigerated sugar cookies (this helps speed up the process, compared to making it from scratch)

–   1 ½ cups of crushed, coarsely, pretzels

–   2 cups of blueberries (this can be fresh or frozen, I’ve also used raspberries with this recipe)

–   ½ cup of sugar

–   2 tsp of vanilla

–   3 packages (8oz/250g each) of cream cheese

–   2 Tbsp of lemon zest

–   3 eggs

–   plus another 1-2 cups of the fruit of your choice for garnish


What You Will need to do:

1.   Preheat your oven to 350°F.

2.   Spray a 13×9-inch pan with cooking spray.

3.   In a bowl, break up the cookie dough and stir in 1 cup of pretzel crumbs.

4.   Evenly press the contents of the bowl into the bottom of the pan and bake for five minutes.

5.   Take the pan out of the oven and place 2 cups of fruit evenly on the crust.

6.   In another bowl, mix the lemon zest, cream cheese, vanilla and sugar, it’s easiest to use an electric mixer for this.

7.   Once everything is mixed together well, add the eggs and mix for another few minutes.

8.   Take the contents of the bowl and gently distribute over the fruit (blueberries).

9.   Bake for about 30 minutes.

10.   Take out of the oven and let cool for about an hour.  After, place in the refrigerator until it has chilled and firmed.  This may take ½-1 hour.

11.   When you are ready to serve, cut up in serving sizes and spoon a few blueberries and the remaining pretzel crumbs on top.

One of my most favourite chocolate bars is Twix so when I came across this recipe at the Real Simple website I had to give it a shot.  This is absolutely delicious.  You have to try it for yourself.


What You Will Need:

–   2 (8oz/250g) bars of cream cheese

–   2 large eggs

–   ½ cup of sugar

–   1 8” chocolate cookie pie crust

–   2 ¾ cups of chopped up Twix (roughly 3-4 packages of the full sized Twix)


What You Will Need to do:

1.   Preheat your oven to 325°F.

2.   With an electric mixer, beat the cream cheese, sugar and eggs together until smooth.

3.   Mix in 2 cups of the chopped Twix bars and continue to mix.

4.   Once the ingredients has completely mixed together, pour into the pie crust.

5.   Bake the pie for 40 minutes.

6.   Let the pie cool down and then sprinkle the rest of the Twix bars on top of the pie.


Strawberry Cheesecake Ice Cream Recipe


I found this delicious recipe from Philadelphia website.  I just wish I would have found this recipe at the beginning of summer.  Here is the recipe:


What You Will Need:

–   8oz (1 package) of cream cheese

–   1 can (14oz) of sweetened condensed milk

–   2 tsp of lemon juice

–   1/3 cup of whipping cream

–   3 chopped up graham crackers

–   1 1/2 cups of strawberries


What You Will Need to do:

1.  Mix the first four ingredients in a blender.  Once completely blended, place in the freezer for about 4 hours.

2.  Blend strawberries until smooth.  Then add the cream cheese mixture and continue to blend until mixed up completely.  Freeze until firm (roughly 7 hours).

3.  Take out of the freezer for about 15 minutes before serving so it will be easy to scoop and serve.
