Lemon Blueberry Pretzel Cheesecake Squares Recipe

A dessert that is sweet and salty ~ hmm, my favourite. I’m pretty sure you’ll find that this recipe will fulfill both the those cravings.
What You Will Need:
– 1 roll of refrigerated sugar cookies (this helps speed up the process, compared to making it from scratch)
– 1 ½ cups of crushed, coarsely, pretzels
– 2 cups of blueberries (this can be fresh or frozen, I’ve also used raspberries with this recipe)
– ½ cup of sugar
– 2 tsp of vanilla
– 3 packages (8oz/250g each) of cream cheese
– 2 Tbsp of lemon zest
– 3 eggs
– plus another 1-2 cups of the fruit of your choice for garnish
What You Will need to do:
1. Preheat your oven to 350°F.
2. Spray a 13×9-inch pan with cooking spray.
3. In a bowl, break up the cookie dough and stir in 1 cup of pretzel crumbs.
4. Evenly press the contents of the bowl into the bottom of the pan and bake for five minutes.
5. Take the pan out of the oven and place 2 cups of fruit evenly on the crust.
6. In another bowl, mix the lemon zest, cream cheese, vanilla and sugar, it’s easiest to use an electric mixer for this.
7. Once everything is mixed together well, add the eggs and mix for another few minutes.
8. Take the contents of the bowl and gently distribute over the fruit (blueberries).
9. Bake for about 30 minutes.
10. Take out of the oven and let cool for about an hour. After, place in the refrigerator until it has chilled and firmed. This may take ½-1 hour.
11. When you are ready to serve, cut up in serving sizes and spoon a few blueberries and the remaining pretzel crumbs on top.
