Slow Cooker Pizza Casserole Recipe

Nothing beats coming home to a yummy meal ready to be serve:


What You Will Need:

–   1 pound of Italian sausage

–   3 ½ cups of crushed tomatoes

–   ¾ cup of chili beans

–   ¾ cup of black beans

–   ¼ cup of black olives

–   1 chopped medium onion

–   ½ chopped green pepper

–   2 minced garlic cloves

–   1 Tbsp of quick cooking tapioca

–   1 bay leaf

–   1 Tbsp of basil

–   1 tsp of salt

–   1 package of pasta of your choice

–   ½ tsp of sugar

–   shredded mozzarella cheese on top, as desired


What You Will Need to do:

1.   In a saucepan, cook the sausage.

2.   Place all the ingredients, except for pasta and mozzarella cheese in slow cooker.  Cook on LOW for 8 hours.

3.   Cook pasta as directed on the packaging.

4.   Pour contents of slow cooker over top of pasta, sprinkle cheese on top and enjoy!



Creamy Mushroom and Barley Pilaf Recipe

I can’t think of words to describe how delicious this recipe is which I found at the Chatelaine website with some few personal changes to make things easier and more efficient:


What You Will Need:

–   1 Tbsp of olive oil

–   1 finely chopped shallot (I’ve made this recipe without and it still tastes great)

–   1 cup of pearl barley

–   2 Tbsp of sherry

–   2 cups of sliced shiitake mushrooms

–   3 cups of vegetable broth

–   1 ½ cups of beech mushrooms (I’ve made this recipe with all shiitake mushrooms and it turned out just as good)

–   ¼ cup of grated parmesan cheese

–   fresh thyme leaves for garnish


What You Will Need to do:

1.   In a heated saucepan, add the olive oil and then shallot.

2.   Cook until it starts to soften.  This will probably take about a minute. 

3.   Add barley and stir until glossy.  This will also take about a minute. 

4.   Now add the sherry and stir often until barley has absorbed all of the liquid.

5.   Next, add shiitakes and broth.

6.   Bring to a boil, then reduce heat to medium-low.  Simmer, covered, stirring occasionally, until barley is tender, 18 to 20 minutes.

7.   Separate enokis and stir into pilaf.  Cook for 2 more minutes.  

8.   Stir in parmesan and season with pepper. Garnish with thyme and enjoy!


Bloody Mary Cream Cheese Dip Recipe


Here is a great dip idea that can be used with vegetables, crackers, chips, pretzels or anything in behalf.


What You Will Need:

–   3 cups of softened cream cheese

–   ½ cup of V8 juice

–   ½ cup of finely chopped onion

–   1/3 cup of puree tomato

–   1/3 cup of finely chopped celery

–   1 ½ Tbsp of horseradish

–   2 tsp of Worcestershire sauce

–   ½ tsp of Tabasco sauce

–   salt and pepper to taste


What You Will Need to do:

–   Combine all the ingredients together and enjoy!

Sweet Potato Rice Pilaf Recipe



My family and I really enjoy sweet potatoes and since it’s the time of year where they become quite abundant, I’m looking for great new ways to use sweet potatoes.  I think you’ll enjoy this recipe.


What You Will Need:

–   1 Tbsp of olive oil

–   1 clove of minced garlic

–   2 finely diced shallots

–   1 1/3 cups of long grain and wild rice blend

–   ½ tsp of ground cumin

–   ½ tsp of ground turmeric

–   ¼ tsp of salt

–   ¼ tsp of pepper

–   2 2/3 cups of chicken broth

–   1/3 cup of chopped pecans

–   2 large sweet potatoes, chopped in medium pieces

–   2 Tbsp of fresh basil


What You Will Need:

1.   Heat the oil in a saucepan.  Add the shallots and garlic.  Cook the contents of the pan until they are softened.

2.   Add the rice, cumin turmeric, salt and pepper.  Continue to stir for a few minutes, until the rice is lightly toasted.

3.   Now, add the broth and let it simmer for about 5 minutes.

4.   Stir in the sweet potatoes and continue simmering until the liquid has been completed absorbed.  This could take up to 15 minutes.

5.   Next, take the pan off the heat and let sit for 5 minutes.

6.   Fluff up the contents of the pan, stir in the pecans and basil and enjoy!


How Long to Cook a Turkey

I absolutely love turkey!  I’m making turkey dinner tomorrow for the family.  I can never remember how long to cook the turkey for.  Right at the Butterball Website, Butterball has a calculator where all you have to do is enter the weight of the turkey and they will let you know how long it will need to be cooked.  I love this feature!
