Seafood Chowder Pot Pie Recipe

I don’t know what to else to say but this is a great treat for either brunch or dinner:
What You Will Need:
– 1 tsp salt
– 2 cups peeled and diced potatoes
– 4 slices bacon, cut into half
– 1/3 cup flour
– 2 cups clam juice
– ¼ cup whipping cream
– ½ tsp onion salt
– 1 cup thawed, frozen peas and carrots
– 1 cup thawed frozen corn
– 1 Tbsp fresh, chopped thyme leaves
– 1 cup cooked, peeled shrimp
– 1 cup of canned crabmeat
– 1 sheet thawed, frozen puff pastry
What You Will Need to do:
1. Preheat your oven to 400°F.
2. In a pot, heat 2 cups water and the salt to boiling over high heat. Add the potatoes and cook for about 5 minutes.
3. Spray 11×7” baking dish with cooking spray.
4. Now in a saucepan, cook the bacon until crisp. Remove bacon; crumble and set aside.
5. Using wire whisk, stir flour into bacon drippings. Gradually stir in clam juice, whipping cream and onion salt. Heat until thickened and bubbly, stirring constantly.
6. Stir in potatoes, bacon, peas and carrots, corn and thyme. Cook 3 to 4 minutes longer or until hot. Stir in shrimp and crabmeat. Spoon mixture into baking dish.
7. On lightly floured surface, unfold pastry. Roll into 12×8-inch rectangle. With sharp knife, cut slits in pastry to allow steam to escape. Place pastry in baking dish over hot seafood mixture. Roll outer edges of pastry over edges of baking dish, and press onto edges.
8. Bake for 30-40 minutes or until crust is deep golden brown. Let stand 10 minutes before serving.
