Cheeseburger Soup Recipe

 

A delicious recipe that is full of taste and is sure to have everyone asking for seconds:

 

What You Will Need to do:

–   1/2 pound ground beef

–   3/4 cup chopped onion

–   3/4 cup shredded carrots

–   3/4 cup diced celery

–   1 tsp basil

–   1 tsp parsley flakes

–   4 Tbsp butter

–   3 cups chicken broth

–   4 cups diced and peeled potatoes

–   1/4 cup flour

–   2 cups cubed process cheese

–   1 ½ cups milk

–   3/4 tsp salt

–   1/2 tsp pepper

–   1/4 cup sour cream

 

What You Will Need to do:

1.   In a saucepan, cook the beef and then set aside.

2.   In the same saucepan, cook the onion, carrots, celery, basil and parsley in 1 Tbsp of butter until the vegetables become tender.

3.   Now add the broth, potatoes and beef and bring to a boil.  Once the contents start to boil, reduce the heat, cover and let simmer until potatoes are tender.

4.   While you waiting for the potatoes to cook, in a separate saucepan, melt the rest of the butter.  Then add the flour and cook until the contents begin to bubble.  Add this to the potato mixture and then bring to a boil.

5.   Once the contents are mixed together well, reduce the heat and stir in the cheese, milk, salt and pepper.  Continue to cook and stir until the cheese has melted.

6.   Now turn off the heat, stir in the sour cream and enjoy!

Smoky Bacon Corn Chowder Recipe

 

 

Here is another hearty supper recipe that can be served as a meal:

 

What You Will Need:

–   6 chopped slices bacon

–   1 finely chopped, white part, leek

–   1 finely chopped potato

–   2 cups frozen or canned corn

–   1 1/2 cups chicken broth

–   1 1/2 cups milk

–   398 ml can creamed corn

–   1/2 tsp dried thyme

–   1 bay leaf

 

What You Will Need to do:

1.   In a large pot, cook the bacon.  Discard all but 1 Tbsp of the bacon fat.

2.   Now add the leek and cook until tender.

3.   Then add the potato, corn, broth, milk, creamed corn, thyme and bay leaf.  Bring to a boil and then let simmer, while continue to stir once in a while, until the potatoes are tender

4.    Remove the bay leaf before serving.

Slow Cooker Chicken Mulligatawny Soup Recipe

 

This is a tasty, filling soup recipe to sure to warm you up on a chilly day.

 

What You Will Need:

–   ½ cup of rice

–   6 skinless chicken breast

–   2 chopped cloves of garlic

–   1 Tbsp of curry paste

–   2 tsp of minced ginger

–   1 ½ tsp of salt

–   2 cups of apple juice

–   1 tsp of cinnamon

–   1 thinly sliced green onion

–   1/2 cup coconut milk

 

What You Will Need to do:

1.   Slice chicken into thin strips.

2.   Combine chicken, rice, garlic, curry paste, ginger, salt, saffron and cinnamon stick in your slow cooker.  Pour in 5 cups water.  Stir until mixed.

3.   Cook on LOW for 8 hours.

4.   Remove cinnamon stick.  Stir in apple juice, coconut milk and green onion.

Curried Pumpkin Vegetable Soup Recipe

 

Here is a soup full of colour and flavour:

 

What You Will Need:

–   1 tsp of olive oil

–   1/2 cup of chopped onion

–   1 minced clove of garlic

–   2 cups of mixed vegetables

–   1 can pumpkin (roughly 1 3/4 cups)

–   1 can (roughly 1 ¾ cups) of diced tomatoes

–   1 can (roughly 1 ¼ cups)of  vegetable broth

–   1/2 cup of water

–   1/2 tsp of sugar

–   1 1/2 tsp of curry powder

–   1 tsp of paprika

 

What You Will Need to do:

1.   In a saucepan, heat oil and then add the onion and garlic.  Cook until onion is crisp-tender.

2.   Stir in all remaining ingredients.  Heat until it becomes to a boil.

2.   Then reduce the heat, cover and let simmer for 10-12 minutes while continuing to stir.

 

Cranberry Vinaigrette Recipe

 

The vinaigrette recipe below is a great way to change any boring salad.  This tastes great with nuts in the salad too:

 

What You Will Need:

–   1 cup of cranberries

–   ½ cup of orange juice

–   1 Tbsp finely chopped green onion but only the white part of the onion

–   2 Tbsp rice vinegar

–   1 Tbsp of lemon juice

–   1 Tbsp of honey

–   1/3 cup of olive oil

–   1/4 tsp of salt

–   1/4 tsp of pepper

 

What You Will Need to do:

1.   In a blender, combine the cranberries, orange juice, onion, vinegar, honey and lemon juice.  Blend until everything has become puree like.

2.   Slowly add the oil and continue to blend in 15 second intervals until desired consistency.

3.   Strain the puree through a strainer, pushing down on the solids.

4.   Mix in the salt and pepper and enjoy!

 

Slow Cooker Wild Rice Soup Recipe

This recipe is a bit different from the usual wild rice soup recipes that I’ve seen and tried before but I really enjoy this particular one: 

What You Will Need:
– 2 tsp vegetable oil
– 1 chopped onion
– 2 diced stalks celery
– 2 diced carrots
– 1 cup of diced turkey
– 1 cup of frozen peas – thawed
– 1/2 cup of wild rice
– 1/3 cup of flour
– 1/4 tsp of pepper
– 1 tsp of tarragon
– 3 ½ cup of chicken broth
– 1 ½ cup of milk
 
What You will Need to do:
1. In a saucepan, cook the onion, with vegetable oil until tender.
2. Add onion; cook about 4 minutes, stirring occasionally, until tender.
3. Spray your slow cooker with cooking spray. Place the onion, celery, carrots, turkey, wild rice, pepper and tarragon in your slow cooker. Followed by pouring the broth on top.
4. Cook on LOW for 6-8 hours.
5. In a bowl, mix the milk and flour together and then stir this mixture and the peas into the soup for the last 20 minutes, uncovered.

Pizza Grilled Cheese Sandwich Recipe

Here’s another twist to the classic grilled cheese sandwich:

Grab two slices of the bread of your choice.  For this particular recipe, my family usually uses multi-grain.  Spread pizza sauce on one slice of bread.  Place a piece of cheddar cheese on top of the pizza sauce.  Top with the other piece of bread.  Cook like you would normally make a grilled cheese sandwich.  Cook until the sandwich is golden. 

 

Chicken Egg Drop Soup Recipe

 

One of my favourite restaurants that I go to serves chicken egg drop soup as a starter.  I’ve been on the lookout for an identical recipe and I think I’ve found it.

 

What You Will Need:

–   2 chicken breasts cut up into cubes

–   4 cups of chicken broth

–   1, 1″ thinly sliced ginger or 1/2 Tbsp of ground ginger

–   2 Tbsp of dry sherry

–   4 chopped scallions

–   1 tsp of sesame oil

–   4 Tbsp of cornstarch

–   3 eggs

–   1/2 cup of diced watercress

–   1/2 tsp of salt

–   1/2 of pepper

–   1/4 cup of water

 

What You Will Need to do:

1.   In a pot, bring the chicken broth, scallions and ginger to a boil and then let simmer for 15 minutes.

2.   Now strain the contents of the pot and just keep the liquid.  Place the liquid back into the pot and stir in the dry sherry.

3.   In a separate bowl, mix the chicken, sesame oil, 1 Tbsp of cornstarch, salt and pepper together.

4.   In a cup, dissolve 3 Tbsp of cornstarch in 1/4 cup water and then stir into the broth mixture.

5.   Next, add the chicken and let simmer until cooked through.  Drizzle the eggs into the soup a little at a time, creating thin sheets of cooked egg.  Gently stir in the watercress.

 

 

 

Tomato Tortellini Soup Recipe

 

Here’s a simple that is filling for your stomach and in taste:

 

What You Will Need:

–   1 package of refrigerated cheese or beef tortellini

–   2 cans of tomato soup

–   2 cups of milk

–   2 cups of half-and-half cream

–   2 cups of vegetable or chicken broth

–   1/2 cup of chopped oil packed sundried tomatoes

–   1 tsp of garlic powder

–   1 tsp of onion powder

–   1/2 tsp of salt

–   1 tsp of basil

–   1/2 cup of shredded parmesan cheese

 

What You Will Need to do:

1.   Cook the tortellini as indicated on package.

2.   In a pot, mix the soup, milk, cream, broth and seasonings together on medium heat.

3.   Keep stirring the soup contents and add the cooked tortellini.

4.   Next stir in the cheese and when everything is mixed well together, serve.

 

Taco Salad Recipe

 

This taco salad is always a crowd pleaser.

What You Will Need:

–   1 pound ground beef

–   1/2 cup of ketchup

–   1 tsp of oregano

–   1 tsp of chilli powder

–   1/4 tsp of pepper

–   1/2 tsp of salt

–   1 medium head of iceberg lettuce, torn into pieces

–   2 medium diced tomatoes

–   1 cup of shredded cheese of your choice (I usually use a Mexican cheese blend)

–   1/4-1/2 cup of canned sliced olives (depending on how much you love olives)

–   1/2 cup of mayonnaise

–   1/4 cup of taco sauce

–   1 1/2 cups of corn chips

 

What You Will Need to do:

1.   In a saucepan, cook beef thoroughly.  Drain the fat off after the beef is cooked.

2.   Now stir in the ketchup, oregano, chili powder, pepper and salt.  Bring to a boil. And then reduce heat, covered and simmer for about 10 minutes.

3.   In a large bowl, combine the lettuce, tomatoes, cheese, olives and beef mixture.

4.   Now add the mayonnaise and taco sauce.  Pour over the salad and toss to coat.  Sprinkle with corn chips.
