We don’t have time during the weekend days to have large breakfasts; however, we do enjoy this on the weekends or for dinner. Here’s one of our favourites:
What You Will Need:
– 2 eggs
– 2 Tbsp of vegetable oil
– 1 cup of flour
– 1 cup of rolled oats
– 1/2 tsp of salt
– 1 1/2 tsp of baking powder
– 3/4 cup of orange juice
– 2 Tbsp of Butter
– Optional: fruit, nuts of whatever you`d like on top of your pancakes
What You Will Need to do:
1. In a bowl, mix the eggs with the oil.
2. In a separate bowl, mix the dry ingredients together.
3. Stir the egg mixture into the dry ingredients.
4. Now stir in enough orange juice to create a thick batter.
5. Heat the butter in a frying pan and pour batter into the pan by 1/4 cupfuls.
6. Cook until done, turning once and enjoy.

Just recently, I’ve become a fan of crepes so I’m always on the lookout for new recipes. Here is one below that is simple in procedure but not simple in taste:
What You Will Need:
– ¾ cup of flour
– ¼ tsp of salt
– ¼ tsp of paprika
– 2 lightly beaten eggs
– 2 cups of milk
– ¼ cup of melted butter
– 1 Tbsp of melted butter
– ½ cup of grated parmesan cheese
– 1 cup of shredded swiss cheese
– 1 package (10oz) of frozen spinach
What You Will Need to do:
1. In a bowl, mix 1/2 cup of the flour and the salt.
2. Next, add 1/2 cup of the milk, the eggs and 1 Tbsp of melted butter. Beat contents of bowl until it is well mixed together and let it sit for about 30 minutes.
3. Preheat your oven to 350°F.
4. Light grease a pan and heat up. For one crepe, pour 2 Tbsp of the batter into the pan.
5. Cook on one side only until lightly browned. Repeat with remaining batter.
6. On low heat, melt 1/4 cup butter in pan.
7. Stir in remaining 1/4 cup flour. Cook or until contents of pan become bubbly.
8. Slowly add the remaining 1-1/2 cups milk.
9. Once completely mixed together, bring to boil but continue to stir. Then reduce heat and stir until contents thicken.
10. Next, add the parmesan cheese. Once everything is mixed well, remove 1 cup of the cheese sauce and place into a bowl. Add the spinach and Swiss cheese and mix together.
11. Spoon about 1/4 cup of the spinach mixture down the center of each crepe and then roll the crepe up.
12. Place the rolled up crepes, seam-sides down, in a baking dish. Top with remaining cheese sauce and sprinkle with paprika.
13. Bake for 25 minutes or until everything has been heated right through.

I love crepes and with that being said, I’m always looking for appetizing crepe recipes. Here’s one which I’m sure you’ll enjoy too:
What You Will Need:
Meringue Cookies:
– 1 egg white
– 1/3 cup of sugar
– 1/4 tsp of cream of tartar
– 1/4 tsp of vanilla extract
Cream Cheese Filling:
– 1 package (250g) of cream cheese, divided
– 3/4 cup of icing sugar
– 1/2 cup of whipping cream
– zest and juice from 1 lemon
Cheesy Lemon Sauce:
– 1 box (212 g) of lemon pie filling
Crepes
– 2 eggs
– 1 cup of flour
– 1/2 cup of milk
– 1/2 cup of water
– 2 Tbsp of melted butter
– 1/4 tsp of salt
What You Will Need to do:
1. Preheat your oven to 300°F.
2. For the meringue cookies: beat the egg white, vanilla and cream tartar with a mixer. Slowly add the sugar and continue to beat. Drop heaping teaspoonfuls of the egg white mixture onto waxed paper baking sheet. Bake for 25 minutes or until they become firm. Set aside.
3. For the cream cheese filling: mix half the cream cheese, lemon zest and juice and icing sugar together well. Slowly add the whipped cream. Once completely mixed, place in the refrigerator.
4. For the lemon sauce: prepare pie filling as indicated on the package, minus the butter. Mix in the rest of the cream cheese and place in the refrigerator.
5. For the crepes: in a bowl, mix the flour and eggs together. Slowly add the water, butter, milk and salt. Heat a skillet where you will be making the crepes. Spray with cooking spray. Pour roughly ¼ cup of batter into the pan and cook crepe. Once you have flipped once and the crepe is light brown, spoon in about 2 Tbsp of the cream cheese filling, roll the crepe and pour lemon sauce over top and garnish with a cookie.
