Eggs Benedict Casserole Recipe

 

Whenever I go out for breakfast, I always order Eggs Benedict.  Yum!  Here’s an easy way to make it a home yourself.
What You Will Need:
 
–   8 eggs
–   3 cups milk
–   3 chopped green onions
–   1 tsp onion powder
–   1 tsp salt
–   1 tsp onion powder
–   3/4 pound Canadian Bacon – cut up into roughly ½” pieces
–   6 English Muffins – cut up into roughly ½” pieces
–   1/2 tsp paprika
–   1 package hollandaise sauce
–   1/4 cup butter
What You Will Need to do:
1.   Preheat your oven to 375°F.
2.   Spray a baking dish with cooking spray.
3.   In a bowl, whisk the eggs, 2 cups of milk, onions, salt and onion powder together.
4.   In the baking dish, layer the Canadian bacon, then the English muffins, alternating until everything is in the dish.
5.   Pour the egg mixture over top of the contents of the baking dish.
6.   Sprinkle paprika over top, cover baking dish and bake for 30 minutes.  Take off cover of dish and bake for another 15 minutes.
7.   While you’re waiting for the above to bake, whisk the hollandaise sauce mix with 1 cup milk in a saucepan.  Once mixed together well, add the butter and bring to a boil.  Once the contents start boiling, turn the heat down and continue stirring until it becomes thick.
8.   Pour the hollandaise sauce over top of the contents of the baking dish and enjoy!
