Cauliflower Gratin Recipe

I’m always looking for different ideas when it comes to making interesting side dishes. Here’s a recipe that has a great combination of delicious ingredients:
What You Will Need:
For the Cauliflower and Sauce:
– 1 tsp salt
– 1 small head cauliflower – cut into florets
– 2 Tbsp butter
– 2 Tbsp flour
– 1 1/2 cups milk
– 1 1/2 tsp prepared horseradish
– 1 tsp Dijon mustard
– 1/8 tsp nutmeg
– 3/4 cup grated Gruyere
For the Topping:
– 8 crushed Ritz crackers
– 1/2 cup panko or corn flake crumbs
– 1 Tbsp butter
– 1/4 cup grated Gruyere
What You Will Need to do:
1. Preheat your oven to 450°F.
2. In a saucepan, bring roughly 6 cups of water to a boil. Add 1/2 tsp of salt and the cauliflower. Let the cauliflower simmer until just tender which will take about 5 minutes. Drain the cauliflower and rinse it under cold water.
3. Melt the butter over in a large saucepan. Whisk in the flour. Slowly add the milk and bring contents of pan to a boil while continuing to whisk until thicken.
4. Remove the sauce from the heat and whisk in the horseradish, mustard, 1/2 tsp salt and the nutmeg. Slowly stir in the cheese, followed by the cauliflower. Pour the mixture into a casserole dish.
5. To make the topping, combine the crushed crackers and panko in a bowl. Melt the butter and stir it into the mixture.
6. Sprinkle the ounce of cheese over the cauliflower, then top with the crumb mixture. Bake for about 15 minutes or until it bubbles and becomes golden.
