Cranberry Vinaigrette Recipe


The vinaigrette recipe below is a great way to change any boring salad.  This tastes great with nuts in the salad too:


What You Will Need:

–   1 cup of cranberries

–   ½ cup of orange juice

–   1 Tbsp finely chopped green onion but only the white part of the onion

–   2 Tbsp rice vinegar

–   1 Tbsp of lemon juice

–   1 Tbsp of honey

–   1/3 cup of olive oil

–   1/4 tsp of salt

–   1/4 tsp of pepper


What You Will Need to do:

1.   In a blender, combine the cranberries, orange juice, onion, vinegar, honey and lemon juice.  Blend until everything has become puree like.

2.   Slowly add the oil and continue to blend in 15 second intervals until desired consistency.

3.   Strain the puree through a strainer, pushing down on the solids.

4.   Mix in the salt and pepper and enjoy!

    Oh why is the cranberry season over here in Poland?? Do you think this would be good made with frozen cranberries? I have actually never used frozen ones as I always prefer to go with fresh but I am tempted to try this out now and not wait till next year.
