Slow Cooker Beef and Chipotle Dip

 

One of our New Year’s Resolutions is to have more people over at our place.  With that, I’m gathering some of the great dishes that I like to serve when entertaining.  Here is one of them:

 

What You Will Need:

–   1 package (250g/8oz) of cream cheese

–   1/2 cup of shredded hot pepper Monterey Jack cheese

–   2 Tbsp of a finely chopped onion

–   2 Tbsp of mayonnaise

–   1 cup of chipotle chiles, chopped and seeded (these can come in a can and is great when you use the sauce from the can too)

–   1/4 tsp of garlic powder

–   1/4 cup of finely chopped dried beef

–   1/4 cup of chopped, toasted pecans

 

What You Will Need to do:

1.   In a bowl, mix the chipotle chiles, garlic powder, mayonnaise, cream cheese, Monterey Jack cheese and onion together.  Once thoroughly mixed, stir in the beef.

2.   Spoon the contents of the bowl into your slow cooker.  Cook on LOW for 2 hours.

3.   Before you are ready to serve, add the pecans on top.
