Cream of Pumpkin Soup with Cranberry Recipe

 

 

I usually have soup for lunch and I’m always looking for recipes to change things up.

 

What You Will Need:

–   3 ½ cups of vegetable broth

–   1 Tbsp of olive oil

–   1 cup of whole cranberry sauce

–   1 Tbsp of brown sugar

–   1 chopped onion

–   ¼ tsp of cinnamon

–   1 tsp of pepper

–   1/8 tsp of ginger

–   1 pumpkin cut up into 1” pieces (5 cups)

–   2 tbsp of heavy cream

 

What You Will Need to do:

1.   In a bowl, stir together ¼ cup of broth, cranberry sauce, oil and brown sugar.

2.   In a saucepan, heat up the butter and onion.  Cook until the onion becomes tender.

3.   Stir the remaining broth, pepper, ginger, cinnamon and pumpkin into the saucepan.  Let boil and cook for about 10 minutes.

4.   Place half of the pumpkin mixture into a blender and blend until contents become smooth.

5.   Repeat step 4 until all of the pumpkin mixture is blended.

6.   Return all the pumpkin mixture into the saucepan.  Heat up, add the cream and continue to stir until everything is mixed well.

7.   Divide soup into bowls and place the cranberry mixture on top.

 

 

Slow Cooker ~ Pepperoni Pizza Dip Recipe

This is a great recipe to change up your usual veggie dip:

 

What You Will Need to do:

–   14oz of pizza sauce

–   1 cup of chopped pepperoni of your choice

–   ½ cup of chopped up green onions

–   ¼ cup of sliced olives

–   ½ cup of chopped red bell pepper

–   1 cup of shredded mozzarella cheese

–   1 package (250g) of cream cheese

–   vegetables of your choice

 

What You Will need to do:

1.   In your slow cooker, mix the olives, pepper, onions, pizza sauce and pepperoni together.

2.   Cook on LOW for 3-4 hours.

3.   Turn your slow cooker to warm and stir in the cheeses.  Continue to stir until the cheeses have melted.

Chili and Garlic Snack Mix Recipe

 

 

Here is a recipe that changes up the usual snack mix:

 

What You Will Need:

–   3 cups of cheerios

–   3 cups of corn chips

–   1 cup of pretzel sticks

–   1 cup of unsalted peanuts

–   1/3 cup of melted butter

–   ½ tsp of chili powder

–   ½ tsp of garlic powder

 

What You Will Need to do:

1.   Preheat your oven to 300°F.

2.   In a bowl, mix the cheerios, corn chips, peanuts and pretzels together.

3.   In another bowl, mix the rest of the ingredients together and then pour over the mixture in step 2.

4.   Evenly spread the mixture over a baking sheet.

5.   Bake for about 15 minutes, stir half way through.

6.   Let this cool down before you serve and enjoy!

 

 

Turkey Breast Stuffed with Curry and Cheese Recipe

 

If you don’t want to make a whole turkey this is a great turkey breast recipe:

What You Will Need:

–   1 Tbsp of butter

–   1 chopped onion

–   2 chopped cloves of garlic

–   1 peeled and diced apple

–   1 slice of cubed bread

–   ½ Tbsp of curry powder

–   1 tsp of salt

–   1 tsp of pepper

–   1 turkey breast

–   1 ¼ cups of gouda cheese or I have used brie for this recipe too

–   ½ can of cranberry sauce

–   ½ cup of chicken broth

What You Will Need to do:

1.   Preheat your oven to 425°F.

2.   In a pan, melt the butter and cook the onion, apple and garlic for a few minutes.

3.   Remove from heat and add the bread cubes, salt, pepper, curry powder.

4.   Cut the turkey in half, add the cheese, apple and curry mixture.

5.   Spread bottom half of turkey breast with mixture, then close up the two halves and hold in place with toothpicks.

6.   Place in an oven-safe dish, brush top with melted butter, season and bake in oven for 15-20 minutes.

7.   Reduce heat to 350°F and cook for 1 more hour.

8.   In a saucepan, cook the cranberry sauce and broth for about 10 minutes.

9.  Serve the cranberry mixture on the side of the turkey and enjoy.

Ricotta, Mango and Coconut Christmas Log Recipe

 

 

 

This log beats any other log I`ve ever tasted before.

 

What You Will Need:

–   1/2 cup unsweetened grated coconut

–   6 eggs, yolks and whites separated

–   1 cup and 2 Tbsp sugar

–   2 tsp vanilla

–   1 cup flour

–   3 cups diced mangoes

–   1 cup Ricotta

–   1 cup 35% cream

 

What You Will Need to do:

1.   Preheat oven to 375°F.

2.   Spread grated coconut out on a baking sheet and toast 4-5 minutes.

3.    In a bowl, use an electric beater to whip egg whites until they hold firm peaks.

4.  In a separate bowl, beat egg yolks along with ½ cup sugar and 1 tsp vanilla for about 5 minutes or until thick and creamy.

5.    Add flour by sifting it over the bowl.

6.   Mix in the beaten egg whites, gently folding dough with a spatula.

7.    Spread dough out on a 12˝ x 18˝ cookie sheet previously greased and covered with wax paper.

8.   Bake in oven for 10 minutes.

9.   Remove from oven and flip onto a clean, moist cloth. Remove parchment paper and roll cake onto itself.  Let cool.

10.   In a skillet, mix ½ cup sugar and the mangoes and cook over medium heat for 10 minutes.  Add a bit of water if the mangoes are not ripe enough.  Let cool.

11.    Reduce to a purée using a food processor or a blender, then add Ricotta and process until a smooth consistency is achieved.

12.   Whip cream along with 2 Tbsp of sugar and the remaining vanilla, then reserve in refrigerator.

13.   Unroll the cooled cake and spread the Ricotta mixture over the inside surface.  Roll the cake up again

14.   Garnish the outside of the log with the whipped cream and sprinkle with toasted coconut.

 

 

Frugal Tip ~ Ease a Cough and Congestion with Hot Peppers

Many people swear by hot peppers or other spicy foods to clear their congestion and ease a cough.  Hot peppers can be part of a healthy diet which may be helpful in building your overall health.

Baked Brie with Sun-dried Tomatoes & Basil Recipe

 

 

For all those brie lovers out there, try serving this appetizer, if you don’t eat it all yourself first:

What You Will Need:

–   1 300g package of brie

–   1 minced clove of garlic

–   1 Tbsp of olive oil

–   3 Tbsp of chopped basil

–   ½ cup of packed in oil sun-dried tomatoes

–   ¼ cup of white balsamic vinegar

 

What You Will Need to do:

1.   Preheat your oven to 375°F.

2.   Thinly slice off the top rind of the brie and throw away.  This way the ingredients will be able to bake in the brie.

3.   Place the brie in a pie plate and bake for about 10 minutes.

4.   In a pan, cook the oil, garlic, tomatoes and vinegar until it becomes syrup like,.

5.   Spoon the sauce over the brie, sprinkle the basil on top and enjoy!

Tomato Tortellini Soup Recipe

 

This is a filling soup recipe that is simple yet delicious:

 

What You Will Need:

–   2 cans of tomato soup

–   1 Tbsp of basil

–   1 package of cheese filled tortellini

–   2 Tbsp of grated cheese of your choice (for this recipe, I like cheddar)

 

What You Will Need to do:

1.   In a pot, heat up the soup and tortellini.

2.   Stir in the basil.

3.   Once the tortellini is at their desired tenderness, pour in bowl, sprinkle cheese on top and serve.

Trying to get those last gifts wrapped?  Try wrapping the present(s) in white paper and have your kids draw and decorate them.  This is a wonderful personal took that I’m sure would be loved by all.
