Slow Cooker Red Curry Chicken Wings Recipe

This is a great appetizer or part of a meal:

What You Will Need:

–   3lbs of chicken wings (equivalent to roughly 15 wings)

–   ¾ cup of unsweetened coconut mil

–   3 Tbsp of red curry paste

–   3 Tbsp of fish sauce

–   2 Tbsp of cornstarch

–   1/3 cup of finely chopped onion

–   2 Tbsp of water

–   Optional:  ¼ cup of finely chopped fresh basil

What You Will Need to do:

1.   BBQ the wings or preheat your broiler.  If not already done, cut each wing at joint to make 2 pieces.  Place wing pieces in a single layer on the unheated rack of a foil-lined broiler pan.  Broil 4 to 5” from the heat for 10-12 minutes or until chicken is brown, turning once.  Drain off fat.

2.   While you’re waiting for the wings to cook, combine the coconut milk, fish sauce and curry paste into your slow cooker.

3.   Next add the cooked wings and onion and cook the wings on LOW for 3-4 hours in your slow cooker.

4.   Using a slotted spoon, remove chicken from cooker; cover with foil to keep warm.  Skim fat from curry mixture.

5.   For sauce, in a medium saucepan combine cornstarch and water; stir in curry mixture.  Cook and stir over medium heat until thickened and bubbly.  Cook and stir for 2 minutes more.  Stir in basil, if desired.  Serve chicken wings with sauce.
