Sundried Tomato & Bacon Risotto Recipe

Risotto is a new favourite of mine. This risotto recipe is simple in how easy it is to do but not simple in taste:
What You Will Need:
– 2 cups of chicken broth
– 1 cup of water
– 4 slices of cooked, chopped bacon
– 2 cups of freshly sliced mushrooms
– ¼ cup of sundried tomato vinaigrette dressing
– 1 cup of uncooked rice
– ½ cup of grated parmesan cheese
What You Will Need to do:
1. Cook bacon in skillet. Once cooked, add the mushrooms and continue to cook for a few minutes.
2. Add the rice and vinaigrette dressing and continue to cook together for about a minute.
3. Next, add half of the water and half of the broth. Continue to cook until most of the liquid has been absorbed.
4. Add the rest of the broth and water and continue to cook for about 10 minutes or until the rice becomes tender.
5. Sprinkle the cheese on top and enjoy!
