Candy Store Cupcakes Recipe

This is a great recipe that I found at the Canadian Living website. I’ve made a few changes to make this recipe a bit easier. I think this could be rearranged so that it`s made in to a festive cupcake too.
What You Will Need:
– Paste food colouring
– 24 gumdrops
For the Icing:
– 1 ½ cups of butter
– 6 cups of icing sugar
– ¼ cup of whipping cream
– 2 Tbsp of vanilla
For the cupcake:
– 1 cup of butter
– 2 cups of sugar
– 4 eggs
– 2 tsp of vanilla
– 3 cups of flour
– 1 Tbsp of baking powder
– ½ tsp of salt
– 1 2/3 cups of milk
What You Will Need to do:
1. To make the cupcakes: in a large bowl, add butter and sugar; beat until fluffy. Beat in eggs, 1 at a time. Beat in vanilla.
2. Whisk together flour, baking powder and salt; stir into butter mixture alternately with milk, making 3 additions of dry ingredients and 2 of milk. Spoon into paper-lined or greased muffin cups.
3. Bake in 350ºF oven until cake tester inserted in centre comes out clean, 20 to 22 minutes. Remove from pan; let cool on rack.
4. To make the icing: in large bowl, beat butter smooth. Beat in sugar alternately with cream, making 3 additions of sugar and 2 of cream. Beat in vanilla.
5. Now, fit piping bag with large plain tip. Dip blunt end of wooden skewer into food colouring. Use skewer to paint 2 vertical lines of food colouring opposite each other on inside of piping bag.
6. Fill bag with icing. Pipe onto tops of cupcakes. Top each with gumdrop.
