Morning Cupcake Recipe

I always like to find something special to make for breakfast on the weekends.  I came across this recipe and it’s too good not to share.

What You Will Need:

–   1 ½ cups of milk

–   ½ cup of maple syrup

–   3 cups of wheat bran flake cereal

–   1 Tbsp of baking powder

–   ¼ tsp of cinnamon

–   7 slices of bacon, cooked

–   ¼ cup of butter

–   2 eggs


–   4 oz of cream cheese (which is about ½ a package)

–   2 Tbsp of butter

–   1 Tbsp of orange juice

–   ¾ cup of powdered sugar


What You Will Need to do:

1.   Preheat your oven to 400°F.

2.   In one bowl, combine the cereal, milk and syrup.

3.   In a separate bowl, mix the flour, baking powder and cinnamon.  Place one piece of bacon aside.  Chop up the remaining bacon up and mix into the bowl with the flour.

4.   Now add the eggs and butter to the bowl with the cereal.

5.   Next, mix the two bowls together now.  Stir together until everything is completely moistened.

6.   Once everything is mixed thoroughly, spoon the mixture into a 12 muffin pan, previously sprayed with cooking spray.

7.   Bake for about 15 minutes.  Check with a toothpick that it is completely baked, if not, place back in the oven for a few minutes.  Once fully baked, set aside to cool down.

8.   For the frosting, beat the cream cheese, butter and orange juice until blended fully.  Slowly add the sugar.

9.   Now spread the frosting on the cupcakes.  Crumble the bacon slices and sprinkle on top.
