I found this mouth watering summertime recipe at Better Homes that I can’t stop getting enough of. Try this out for one of those hot days, when you don’t feel like during on the oven, or even for a potluck.
What You Will Need:
– 1/3 cup of sugar
– 3 Tbsp of white wine vinegar
– ½ tsp of ground ginger
– ½ tsp of salt
– 3 Tbsp of extra virgin olive oil
– 3 Tbsp of vegetable oil
– 1 ½ tsp of toasted sesame seeds
– ½ tsp of toasted sesame oil
– a sprinkle of cayenne pepper
– 2 cups of cut up watermelon, seedless
– 2 cups of cut up cantaloupe
– 2 cups of cut up honeydew
– 1 cup of sliced English cucumber
– lettuce leaves
– chopped up fresh cilantro
– 5 slices of cooked bacon, crumbled
What You Will Need to do:
1. Combine sugar, vinegar, salt and ginger into a saucepan and stir over medium heat until the sugar has dissolved.
2. Place contents of saucepan into a bowl. Slowly whisk both vegetable and olive oils into mixture. Once mixed thoroughly, add the sesame seeds, sesame oil and cayenne pepper. This will be used as the dressing.
3. In a separate bowl, combine the melon and cucumber together, followed by adding ½ cup of the dressing.
4. Line bowl(s) (depending on how you are going to serve this dish) with the lettuce. Add the melon mixture on top.
5. Finally, sprinkle the cilantro and bacon on top.
