Hash Brown Potato Casserole Recipe

What You Will Need: 

–  1 bag of frozen hash browns – thawed
–  3/4 cup  melted butter
–  1/2 cup of chopped  onion
–  1 can of cream of chicken soup (or cream of mushroom; however, I do prefer the cream of
chicken)  undiluted
–  1 cup of sour cream
–  1 cup of shredded cheddar cheese
–  2 cups of corn flakes- crushed
–  1 tsp of parsley flakes (optional)

What You Will Need to do:

1.  Combine potatoes, 1/2 cup butter, onion, soup, sour cream and cheese together.

2.  Spoon mixture into a buttered a casserole dish.

3.   Stir remaining butter with corn flakes (easiest way I’ve found to crush the corn flakes is to place in a plastic bag and crush with a rolling pin).

4.  Sprinkle over potato mixture.

5.  Bake in a pre-heated 350°F oven for 40-50 minutes.

Wisdom on ways to cut your grocery bill

Especially in the months following Christmas, it seems that we’re all trying to cut corners to save money.  One of the things I usually start off is by not going out as much to eat and in turn, a lot of cooking and eating at home occurs.  However, I still have a tendency of going overboard at the grocery store which in the end doesn’t necessarily save us as much money as I had intended.  It takes planning and a bit of discipline but I’ve come up with some strategies to keep our food bills low which are:
1. Make a Budget
This may sound so simply but it’s quite effective to start a realistic budget. To make a grocery budget, track your food spending for a month, review how much you spent and what you bought. Single out impulse buys and luxury purchases you could do without. Then, set a number to guide your food purchases for every month. I can’t stress enough that you need to make sure the figures in your budget are realistic because if the numbers are too low, you’re setting yourself up for failure.
2. Use Cash

Using cash helps you stay disciplined at the store (something that’s harder to do when you’re pulling out plastic).  This way, you become more aware of what’s coming and going compared to a number that just flashed by when you’re entering your pin.

3. Meal plan
Believe it or not, meal planning doesn’t take as long as you’d suspect.  After getting into a groove, it shouldn’t take more than 15 minutes to plan all of your meals for the week: breakfast, lunch, dinner and even snacks. I know some people find that picking a theme or set of meal ideas will help guide your shopping and allow you to reuse ingredients.
4. Make a list
Go to the store with a solid list in hand and then stick to it. A list will stop you from overbuying and keep you focused so you’re less likely to get distracted by stuff you don’t need.
5. Clip coupons
The first idea of this and I rolled my eyes thinking no way!  But I’ve been collecting and clipping coupons for a 6 months now and I can’t believe the savings.  Plus, it’s a lot easier than I would have every thought.  I can’t recommend this enough!
6. Stock up on sale items
If something’s on sale, buy double or triple if you have the room. It’s hard to have money just sitting there when you’re on a fixed income but once you get this process going, it becomes much easier.  For example: there were some toothbrushes on sale at the local drugstore this week for which I also had a coupon for.  I walked away with 10 toothbrushes for 15¢ each and I’m not talking about the cheap, big enough for a horse, these were Oral-B toothbrushes that I buy all the time.
7. Try not to throw food out
Did you know that a third of all the food consumed in the world is either lost or thrown in the garbage? Whether its leftovers or meals planned around the odds and ends of food left at the end of the week, do your very best not to throw food away. If anything, I take leftovers to work with me the next day for lunch.  Sometimes it gets boring to eat the same thing a couple of days in a row so I’ll throw the leftovers in the freezer for lunch at a later time.
8. Don’t buy items at the checkout
From gossip rags to crossword puzzle books, we throw a lot of impulse purchases into the cart while we’re waiting in line. It’s cheaper to subscribe to your favorite publications, read them online or go to your public library.  I was surprised to see the most current and up-to-date magazines that the library had
9. Eat less meat
This is something that I really need to work on better but whether it’s pasta, vegetables or rice, there are loads of yummy reasons to eat meatless meals.
